Spinach and Mushroom Egg White Omelette

I am a great fan of super fast and easy recipes… and one of the easiest or fastest is a simple omelette!

All you need to do is fry up some sliced mushrooms, then add in a handful of spinach. Meanwhile, beat together eggs, cheese, salt and pepper. Pour the egg mix straight into the frying pan and stir to mix with the mushrooms and spinach. Then leave to set until the bottom of the omelette is golden brown and the top is almost-but-not-quite yet set. Finally fold the omelette in half and tip out onto a plate. You will have your delicious and healthy meal in just 10 minutes!

Ingredients:

  • 4 egg whites
  • 1 cup fresh spinach, chopped
  • 1/2 cup sliced mushrooms
  • 1/4 cup diced onions
  • 1 clove garlic, minced
  • 1/4 cup diced tomatoes
  • 1/4 cup low-fat shredded cheese (optional)
  • Salt and pepper to taste
  • Cooking spray or a small amount of olive oil

Instructions:

Heat a non-stick skillet over medium heat and lightly coat it with cooking spray or a small amount of olive oil.

Add the diced onions and minced garlic to the skillet, and sauté for 2-3 minutes until they become translucent.

Add the sliced mushrooms to the skillet and cook for another 2-3 minutes until they soften.

Stir in the chopped spinach and diced tomatoes, and cook for an additional 1-2 minutes until the spinach wilts.

In a separate bowl, whisk the egg whites until they become frothy. You can season them with a pinch of salt and pepper.

Pour the whisked egg whites over the vegetables in the skillet. Tilt the pan to ensure the eggs cover the entire surface evenly.

Cook the omelette for 2-3 minutes or until the edges start to set.

If using cheese, sprinkle the shredded cheese over one-half of the omelette.

Carefully fold the omelette in half, covering the side with cheese. Press it gently with a spatula to help the cheese melt.

Cook for an additional 1-2 minutes or until the egg whites are fully set and the cheese has melted.

Slide the omelette onto a plate, and it’s ready to serve!

You can also enjoy this nutritious egg white omelette with a side of whole-grain toast or fresh fruit for a complete and healthy breakfast. It’s low in calories and packed with protein and essential vitamins from the vegetables. Enjoy!
